VINIFICATION AND AGEING
In addition to his parcel approach, Xavier Vignon’s cultivation choices involve intervening as little as possible. He prefers to guide and support the vine rather than control it, to allow it to speak for itself instead of speaking on behalf of it, to glorify nature without seeking to dominate it.
