Vinification et élevage
Vinification
Manual harvesting.
Fermentation at moderate temperature to favor the soft diffusion of aromatic compounds.
Ageing
Short aging in concrete tanks to favor the purity of the fruit and the expression of the grapes.
Aged 80% in concrete vats and 20% in wooden truncated cone vats.
Food and wine pairing
Grilled beef – Subtly spiced pork ribs – Couscous with vegetables – Eggplant with lemon
